- Becky’s bacon/thyme macaroni & cheese (with mild yellow cheddar instead of sharp white because I’m poor…)
- Fresh steamed broccoli with Joy of Cooking’s parsley/lime/cumin viniagrette thickened with a little mayonnaise
- Sliced apples sauteed in butter, cinnamon, nutmeg, and cloves
- Strawberry shortcake for dessert
Last night our Fall 2009 Reformation Theology professor came for dinner along with one of our best buddies from the organ department–the guy who played most of our wedding. We sat around the table talking and laughing till 9:00 p.m.
I enjoy the cooking process far more than the eating, and what’s most fun is having to get the house clean, the table set, several dishes prepared, and the tiny little kitchen put back together in a limited time. Last night I had 2 hours. The night the Ferg’s came, an hour and a half. It’s becoming a game.
I’ve also figured out the trick to continuing to cook yummy food while trying to lose weight. We have company a couple times a week and I cook nice meals for them so they can eat it all and we don’t have to sustain all the damages ourselves. Then we eat small portions of the leftovers for a day or two. This afternoon Mike ate the leftover mac & cheese and I finished off the broccoli and drank a SlimFast shake. Leftover broccoli + SlimFast? I should get points for that. 🙂 It’s amazing what you’ll eat when you pay for your own groceries! We’ve rolled out of bed and gone straight to the gym every morning this week. Three pounds down, about 12 to go. I’m feeling like a completely different person now that I’m exercising again for the first time since January.
