Last Night’s Menu

We had a rather spontaneous dinner party last night with a St. Olaf friend who graduated with us. She’s been living in the same apartments as we have for the summer so we finally got together. She brought stuff to make brie-filled croissants for an appetizer, and a bottle of sparkling grape juice. Fancy! After looking through a bunch of recipes together, this is what we ended up with:

  • Boiled, chunked potatoes garnished with fresh parsley and lemon
  • Steamed green peas
  • Pork chops, rubbed with rosemary, salt, and pepper, and then glazed with: 2 TBSP water, 3 TBSP orange marmalade, 2 TBSP strawberry preserve, and 2 TBSP red wine vinegar, heated together. We broiled them 5 minutes on each side, glazing each side as they were put under the broiler. They were perfect!
